Yesterday I was a spoiled woman on Mother’s Day but today the real world was back and it was definitely a Monday. I got home from work 45 minutes late and had no idea what to make for dinner. I wanted nothing more than to order a pizza and veg on the couch with my hubby but I knew that wasn’t a good idea, an easy one, but we didn’t eat the healthiest this weekend. Instead I pulled some riced cauliflower out of the freezer, I love the Green Giant brand, some frozen summer veggies and some very lean ground turkey. I basically made a stir fry with the cauliflower rice. I always worry it will be a little bland especially when using frozen veggies but I just made sure to season as I went along. I used salt, pepper, ground mustard, a touch of cumin, California style onion powder and ground ginger. I also added sesame oil, rice wine vinegar and Bragg’s Aminos. After cooking thoroughly I scrambled some eggs in a separate pan and added that to the mixture. In about 15 minutes or so we had a filling and healthy dinner. I even told my husband that he could have seconds if he wanted, but he didn’t, because it was filling 🙂

I still need to try roasting some cauliflower and trying it in my Chicken Fried Rice dish but I forgot to buy a head of cauly at the grocery store and I don’t really want to try it with frozen, riced cauliflower. I’ll try to get to it this week if I can. I did throw some chicken breasts in Italian dressing as a marinade tonight and will figure out how to cook it tomorrow night. I’m thinking about sautéing some spinach, mushrooms and onions together and then stuffing the chicken and baking it. Just have to see what strikes me tomorrow evening.♥♥♥
